La Botte means the barrel. A barrel is typically sealed to impart its unique flavor profiles into the product it houses to help catalyze key chemical changes while the product matures. The restaurant was given the name to reflect the time when it’s’ opening occurred. Shortly after its’ grand opening, the country as well as the world went into quarantine due to the pandemic. Thus, La Botte was sealed for over a year, giving us time to take in all the elements and changes the world endured. When we reopened, we had aged to perfection.
